Serves 3 to 4
1 medium onion, chopped
2 cloves of garlic. finely chopped
A glug of oil
125ml water
2 eggs
250ml milk or yoghurt
60g flaked almonds (optional)
500g good quality beef or lamb mince
1. Heat the oil in the saucepan over a medium heat
2. Add the onions and Now Now Whole Spices and cook them slowly to build the flavours until they are semi translucent and aromatic
3. Add the mince and stir it all up
4. Add the Now Now Bobotie Spice Mix, Now Now Dried Apricots, garlic and nuts if you are using them. Mix well over a medium heat
5. Add the water, give it all a good stir and bring to the boil
6. Turn the heat down to medium, cover with a lid and let it cook gently for 15 minutes
7. Stir every few minutes so it doesn't catch on the saucepan
8. Take off the lid and crank up the heat. Allow some of the liquid to reduce without it becoming dry (you want a bit of sauce!)
9. Spoon into an ovenproof dish and set aside
10. Now for the topping ... add the eggs, milk or yoghurt, and Now Now Topping Spice Mix (keep the bay leaves aside) into a mixing bowl
11. Beat gently until well mixed
12. Pour evenly over the Bobotie and garnish with the two bay leaves you have kept aside
13. Bake at 180 degrees Celsius for 30 minutes or until golden
Tip: Personally I prefer a thicker milk product for the topping ... so yoghurt or buttermilk is great! Milk is fine too if that is what you have in the fridge!
